Job Description

As a Sous Chef your goal is to be committed to providing our guest with exceptional service, quality, and value. Cleanliness of the food service area is essential, as well as maintaining the quality and freshness of the food while performing tasks directed by the Production Chef and Corporate Chef. The Sous Chef assists with training, assigning duties and supervision of the kitchen staff during the preparation, cooking and garnishment of food items. They will assists in the development of new menu offerings, banquet menus and reviews all banquet event orders to ensure all menu items and set-ups are prepared to Standards. The ideal candidate must be innovative, detail-oriented, and a multi-tasker with good oral communication and interpersonal relationship skills.

Essential Functions

  • Preparation and production of all meals, food quality and presentation according to assignment.
  • Food preparation, including prep work leading up to meal service & events. As well as all necessary cooking on the day-of and during the event.
  • Compliance with all safety and sanitation standards and regulations.
  • Maintenance of cost controls and overall profitability.
  • Creation and implementation of menu selections for special banquet themes and events based on current food trends and regional tastes in partnership with the Production Chef and Corporate Chef.
  • Compliance with federal, provincial, local and company health, safety, sanitation and alcohol awareness standards.
  • Maintenance of sanitary food preparation and storage areas at all times in accordance with provincial requirements and codes.
  • Operation of the kitchen, while ensuring the highest standards and quality of produce is being consistently delivered.
  • Daily and weekly purchasing.
  • Maintenance of strict health and safety and food hygiene standards.
  • Maintain all standards, Handbook Guidelines and Policies.
  • Familiar with Sapphire recipes, ingredients, and equipment.
  • Maintain quality and proper rotation of products.
  • Assist Chef with employee evaluations and accountability.
  • Cleaning and care of equipment.
  • Labeling.
  • Know MSDS.
  • Other duties as directed.


  • At least 4 year experience working in commercial kitchen.
  • CA Serve Safe Certificate.
  • Ability to work well with people in a team environment.
  • Ability to communicate effectively both written and oral.
