SOUS CHEF | FULL TIME

Job Purpose
Train, supervise, and work with all culinary staff. Supervise staff on preparation, cooking, and presentation of food for catering and school food service. Maintain freshness and quality standards of food and oversee kitchen and walk-in cleaning. Adhere to and scale recipes as directed by the Chef.

Hours Required
Required to work varying schedules to reflect business needs. Exempt position

Duties and Responsibilities

  • Teach and promote mission statement and team building
  • Assign in detail specific duties to all employees
  • Inspect all produce, fish, meat, and poultry for freshness and highest quality standards
  • Maintain all quality, cleanliness and sanitation standards
  • Check for portion control
  • Oversee employees’ stations and report to chef
  • Calibrate thermometers
  • Work station
  • Check coolers to ensure proper rotation to comply with health department regulations
  • Assist with development of menu and specials
  • Order and maintain proper inventory control
  • Know MSDS
  • Ensure daily prep lists are written and utilized
  • Assist chef with employee evaluations and accountability
  • Follow handbook guidelines and policies

Qualifications

  • 4 years experience in high volume scratch cooking, banquet cooking
  • 2 years in a supervisory roll managing staff
  • Must posses basic computer skills
  • Good working knowledge of hot and cold food preparations
  • Model professional behavior including punctuality and being a team player
  • Ability to speak, read, and write in English
  • Subject to background check, complying with all state and federal laws

Physical Requirements
Stand for long hours, work in both hot and cold environment, use heavy machinery, able to bend, squat, stoop, and stretch to fulfill proper cleaning tasks. Lift 50#

COOK | FULL & PART TIME

Job Purpose
Sapphire Culinary Group is looking for experienced and dedicated individuals with high standards of excellence to build its team of professionals. We are seeking talented people who are committed to providing guests with exceptional service in Costa Mesa, Huntington Beach, and Rancho Santa Margarita.

Hours Required
AM and/or PM shifts

Duties and Responsibilities

  • Maintain all standards
  • Familiar with Sapphire recipes, ingredients, and equipment
  • Cook food to specs
  • Maintain quality and proper rotation of products
  • Assist sous chef with maintaining inventory
  • Daily prep
  • Work clean, work safe
  • Cleaning and care of equipment i.e. robot coupe, blender, etc…
  • Labeling
  • Sanitation
  • Cleaning station, line, kitchen, fryer
  • Know MSDS
  • Follow cleaning schedule
  • Ability to do all tasks assigned by management
  • Write prep list
  • Calibrate thermometers
  • Follow handbook guidelines and policies

Qualifications

  • 2 – 4 years experience in high volume scratch cooking, banquet cooking
  • Ability to read and write English
  • Follow direction

CASHIER / LUNCH ATTENDANT | FULL & PART 

Job Purpose
To run daily transactions using SAS POS system (POSI or FSS). Distribute lunch items to students in a timely and helpful manner. Assist cooks with plating of school meals when needed and assist with stocking retail products for sale.

Hours Required
AM and/or PM shifts

Major Duties and Responsibilities

  • Ensures proper distribution of lunches, pre-order and walk up
  • Follows all sanitation guidelines
  • Assist kitchen with prep of dressings, packing of meals, items to be sold, lunch boxes etc.
  • Pre-load all lunch boxes for the day
  • Supports on site catering when needed
  • When applicable, supports organization of parent volunteers assisting with lunch distribution
  • Providing excellent & comprehensive customer service to students, parents, and school staff members
  • Provide direction to parent volunteers who assist in distribution of lunches. Oversee that they are following proper health code and distributing preordered lunches according to Sapphire at School guidelines.
  • Operation of POS touch screen computer
  • Prepares daily written menu board for display
  • Prepares outside serving areas, sanitize, and setup
  • Adheres to any special lists while packing lunch boxes
  • Supports Lead Lunch attendant with duties when necessary
  • Any tasks that are assigned to you by a Manager, not listed above

Minor Duties and Responsibilities

  • Ability to work under pressure
  • Ability to read, write and speak English

  • Access to reliable transportation
